Jam ☺

I got the recipe off the internet, there is no pectin which I guess is a preservative? This is just 100% organic berries, sugar, and fresh squeezed lemon. I don't think it will have much of a shelf life but I am sure my crew will gobble it up before it goes bad ☺

  1. Looks really good! I believe the pectin helps it "jell". But some jams / jellies don't need it, esp if you are making something with crabapples. Makes me want to go grab a warm biscut!

  2. I was wondering if it "jelled"? I've made jam with not enough pectin and it's like soup.
    looks good though! love strawberry jam, homemade is the best!!!

    1. It jelled, I wouldn't put it on something to eat later it might get runny, but straight out of the fridge it is soo good!!!

  3. As pectin is heated, it helps jams thicken and hold together, similar to adding flour or corn starch to gravy/soup/etc. Definitely no preservative properties. If you didn't boil the jam in hot water bath it must be stored in the refrigerator. If boiled/canned properly, jam will easily keep on a shelf for over a year.
